refactor: Use litellm for embeddings and add manual editing

This commit refactors the knowledge card content population feature to use litellm.embedding instead of SentenceTransformer for generating embeddings. This makes the embedding generation consistent with the rest of the application.
This commit also introduces the functionality for users to manually edit the generated sections of a knowledge card.
