Fix VC overview sentence to name all credential types (closes #758)

Updates the Verifiable Credentials overview sentence in website/docs/specification/VerifiableCredentials.md to explicitly name and link every UNTP data model that is issued as a W3C VC, instead of the generic "passports, credentials, and traceability events" phrasing.

Now reads:

...which recommends that Product Passports, Conformity Credentials, Traceability Events, Facility Records, and Identity Anchors are all issued as W3C VCs.

Why

Public review feedback (#758, Anish Karmarkar/Microsoft) flagged that Digital Traceability Events (DTEs) weren't clearly called out in this sentence. Rather than just adding "DTEs", this spells out and links all five VC-issued data models (DPP, DCC, DTE, DFR, DIA) by name so none are ambiguous or left out going forward.
