feat(schema): add optional issuingSoftware property to credential schemas

This MR adds an optional top-level issuingSoftware property to the five UNTP Verifiable Credential schemas (DPP, DCC, DFR, DIA, DTE), matching the structure documented in the SWI registration guide.
