Draft: Selective Disclosure rewrite to "Variant-based Disclosure"

This merge request addresses #571 where it has been flagged that "Selective Disclosure" is a terminology that is well established in the Verifiable Credential ecosystem.

This change proposes a rename from Select Disclosure to Variant-based Disclosure and clearly calls out the distinction from "Selective Disclosure" in the Verifiable Credential ecosystem.
