Issue Description

Most conformity schemes contain assessment criteria that are arranged in a hierarchy. For example a collection of criteria under labour rights and another collection under waste management

However the current dpp/dfr/DCC models represent claims and assessments as a flat list. Whilst it's perfectly possible to represent a hierarchy as a list, it may be useful to allow for a hierarchical structure

That would also allow for a score / rating at the category level that aggregates the conformity scores at leaf level. Which could also be useful when implementing selective redaction. Some audit subjects may be willing to publish performance at fine grained level, others only at category level. A hierarchy would allow audit subjects to redact leaf level performance leaving category level
